Easy Cream Custard

Ingredients:

1 litre soy milk (Vitasoy)
4½ T cornflour
2 T honey, or more to taste
1 can coconut cream (400 ml)
3 t vanilla

 

Method:

  1. Whiz all ingredients together in the blender.

  2. Cook the mixture in a saucepan, stirring until thick.

  3. If the custard is lumpy, whiz again in blender.

  4. Pour custard into a bowl and cover until cooled, so a skin does not form.

  5. If a skin does form, remove it while it is still warm.

  6. If you desire a more runny custard, use less cornflour.


This can be eaten warm or cold; with fresh or canned fruit like bananas, peaches, apricots or pears.

The best milk for this recipe is Vitasoy, in the red and white carton.
