Lentil & Spaghetti Bolognese

Ingredients:

2 tblsp extra-virgin olive oil
1 onion, diced
1 medium carrot, grated
½ capsicum, diced
250g mushrooms, sliced
½ cup pecans, chopped
2 garlic cloves, minced
1tblsp balsamic vinegar
1 tblsp soy sauce
1 tblsp Worcestershire sauce
500g jar pasta sauce
400g tin diced tomatoes
400g tin lentils, drained and washed
1 tblsp tomato paste
Salt and pepper
Spaghetti

 


Method:
  1. Heat oil in a large pan over medium heat.
  2. Add onion and cook until it begins to soften.
  3. Add carrot, capsicum and mushrooms and cook until soft stirring occasionally.
  4. Add nuts and garlic, then add the balsamic vinegar, soy sauce and Worcestershire sauce and stir to incorporate.
  5. Add the pasta sauce, tinned tomatoes, lentils and tomato paste and stir.
  6. Reduce heat and simmer 20 – 30 minutes.
  7. Season to taste with salt and pepper.
  8. Bring a large pot of salted water to the boil.
  9. Add spaghetti and bring the water back to the boil.
  10. Cook pasta until al dente (about 9 minutes).
  11. Drain pasta and place in serving bowl.
  12. Serve with Bolognese sauce.
