Baby Spinach Salad

Ingredients:

In a bowl mix together:

½ Red Onion, finely diced
1 medium Tomato, finely diced
½ cup Cashew Mayonnaise
¼ tsp Tarragon

Method:

1. Add one bag of baby spinach and gently mix through.
