Light Summer Coleslaw

 

  • Preparation time: 15 mins

  • Serves: 4-6

 

 

Ingredients:

1/4 cabbage sliced.
2 medium carrots grated.
2 sticks of celery, finely chopped.
1/2 red capsicum, finely chopped.
1/4 cup salad seeds (mix of sunflower, pumpkin, sesame and poppy seeds).

 

Dressing:

2 Tbsp Lemon juice
2 Tbsp Olive Oil
1/2 tsp salt

 

Method:

  1. Combine all salad ingredients in a large mixing bowl.
  2. Combine dressing ingredients together.
  3. Toss dressing through salad just prior to serving.

 

 

Nutritional Information (per serve):

480 kilojoules (115 calories), 2g protein, 9g fat, 3g Carbohydrates, 230mg Sodium, 280mg Potassium, 40mg Calcium, less than 1mg Iron, 3g Fibre
