Kumara & Lentil Pie

  • Serves: 6

 

 

Base:

1 1/2 medium onions finely chopped.
4 cloves of garlic finely chopped.
1 Tblsp olive oil.
2 x 400g can of lentils, drained and washed.
2 x 400g cans of diced tomatoes.
3 Tsp Italian herbs
2 Tblsp Tomato paste
2 Tsp Oregano

 

Topping:

2 large Kumara (Sweet Potato) peeled and cubed.
1/4 pumpkin, peeled and cubed.
1/2 medium onion, finely chopped.
Soy milk.

 

Method:

Base:

  1. Cook onion and garlic in a large pot with oil until translucent.

  2. Add the rest of the ingredients and stir.

  3. Bring to the boil then leave on low heat until your topping is ready.

 

Topping:

  1. Boil Kumara and pumpkin for 10 - 20 mins or until the pumpkin and kumara are soft.

  2. Drain the pumpkin and kumara and roughly mash.

  3. Add onion to the mash.

  4. Add enough soy milk to make the mash your desired consistency.

 

Bringing it together:

  1. Preheat your oven to 200 Celsius.

  2. Pour base mixture into the bottom of a casserole dish.

  3. Cover the base mixture with the mash topping (DO NOT STIR).

  4. Bake for 10 mins or until crisp around the edges.
