Pear Cream Topping

 

Lentil & Vegetable Casserole

  • Serves:

 

 

Ingredients: (Adjust ingredients depending on the quantity needed.)

Carrots
Celery
Onions
Garlic
Brocollini (Chopped / Sliced)
1 Fresh Sweet Corn Cob
1 T Massell Chicken Stock
1 400g tin Lentils (new seasons lentils)

 

Method:

  1. Place all vegetables and stock into an appropriate sized saucepan.
  2. Cover well with water.
  3. Bring to the boil
  4. Simmer for 30 minutes or until vegetables are cooked. (Soft but not mushy)
  5. Wash and drain the Lentils
  6. When almost cooked, add washed and drained lentils
